I prefer the Yule/Cordier edition.  It is available free online.  Volume 1 should be sufficient for our class.  Volume 2 is optional.

Feel free to skip the tributes to Henry Yule.

Definitely read the prologue.

It is essentially a travel log, describing various places he has visited in the far east.  So I feel this would be a good book to practice the skill of skim-reading on.

Skim the rest, especially the (larger) text of Marco Polo himself.  The smaller text is explanatory notes from Henry Yule, which you can read if it relates to something you find interesting.
